I lift off the throttle, and let the motor slow me down a bit. I tend to anticipate lights, so as to not have to jam on the brakes. I then press the brake. I'll press the clutch as the revs drop to 2k or so. Don't know exact, it's just instinct. Once I come to a complete stop, I'll either put the car in first gear, or in neutral. If in neutral, I'll take my foot off the clutch pedal. I used to try to avoid using my brakes, by coasting in gear. But now I lightly use my brakes, so my brake lights come on. Safer that way. The expression for street driving is "brakes are cheaper than transmissions".
On the track. If you are going 50mph in 4th gear, you shouldn't be on the track.
Braking and downshifting are done in a straight line. One slows the car before the turn in point (here I'll heel and toe, to mantain control of the car), and shift to the gear that's appropriate for corner exit. Depending on the car, near the apex the throttle is applied. GO GO GO
